Fun Day Challenge

Celebrate National Ice Cream Sandwich Day

We are celebrating a fun and unusual holiday with a challenge for you to engage in. There are three easy steps to participate. First, choose your favorite option that you'd like to try. Second, take a picture of yourself doing the activity. Lastly, fill out the form below by midnight, August 31, 2025. This program is open to all employees and spouses. Any employee or spouse who participates will be entered into the raffle. For every ten submissions there will be a raffle winner!

National Ice Cream Sandwich Day!

National Ice Cream Sandwich Day (August 2) is the perfect opportunity to craft a unique and refreshing summertime treat. Ingredients for ice cream sandwiches include biscuits, wafers or cookies filled with frozen dessert or confection. On this day you’re encouraged to cool off and share a frozen treat with family or friends.
 
For each sandwich, spread ~1/4 cup of frozen dessert onto one sandwich outer layer, top with another sandwich outer layer. Roll ice cream sandwich edge with suggested garnishes. Eat immediately or freeze until ready to serve. Each recipe makes one sandwich.

  • Option 1: Maple Walnut Waffle Ice Cream Sandwiches

    Sandwich outer layer: 2 mini frozen waffles (toasted, then cooled)
    Frozen dessert: 1/4 cup maple walnut (or other ice cream)
    Garnish: roll ice cream edge in 1 Tbsp. chopped, toasted walnuts!

  • Option 2: Banana "Ice Cream" Sandwich

    Sandwich outer layer: 2 vanilla wafer cookies
    Frozen dessert: 1 frozen banana processed in a food processor with 1/8 tsp. vanilla
    Garnish: 1 Tbsp. mini chocolate chips, toasted coconut, or rainbow sprinkles!

  • Option 3: Double Lemon Sorbet Sandwich (gluten and dairy-free)

    Sandwich outer layer: 2 Tate’s Bake Shop gluten free lemon cookies
    Frozen dessert: 1/4 cup lemon sorbet
    Garnish: 2 Tbsp. small blueberries
